Ha! Yeah, maybe this was a good episode for you to start out on.
A couple notes: McCoy is usually a lot more likable than in this episode- I promise! Actually, he was the one of the three I was least annoyed with during the course of the series.
Spock actually didn't mind-meld a lot during the series, I can only think of one or two episodes besides this that he did (one of them is "Devil in the Dark" and that was with a giant rock). You kind of get the feeling that it's emotionally distressing for him, which is doubly bad for a Vulcan. But apparently practice makes perfect, because he mind melds with somebody at least once in every movie.
Chapel's backstory is one of the most misogynistic in Trek history for a female character, I'm afraid. Originally she joined the fleet to be with her fiance, which... didn't work out (that's an episode) and then she fell for Spock. And that was pretty much all she ever got, as a character. She is, however, consistently good at her job, which is something.
