Because he reacts just like he would if it were Katara or Sokka - perhaps even more than he would for them

Even more so, I think, because Appa is an innocent that Aang is responsible for, whereas Sokka and Katara kind of look after him, and have shown they can mostly get by by themselves. Also, he's been with Appa for much longer.
