I know this was for taverymate, but I thought I'd jump in anyway. (And, sorry, some of this is kind of a repeat of what's actually in the post, but I figure this way it's all in one convenient location.)
Here are the dS vids I know of (main characters/topics in parentheses):
"Wonder of Birds" (Fraser and Kowalski), "If You Knew" (Frannie and Fraser), "Lord I Have Made You a Place in My Heart" (Fraser, Vecchio, Kowalski), and "Big Man on Mulberry Street" (Vecchio). These are all by laurashapiro ("Wonder of Birds" is also by morgandawn), whose site is password protected; to get in, send her an email (mailto:laura@humandesign.com).
"Give a Man a Home" (Fraser and Vecchio), by barkley. Her site is password-protected, and I'm not sure what her front page linking policy is, so I'm going to err on the side of caution. For access, you can email her here (mailto:vids@bonuspoints.net).
"From Where I Stand" (Fraser, Kowalski, Vecchio), by thevetia, "Full of Grace" (Fraser and Vecchio), by morgandawn and thevetia, and "Flying Home" (Fraser), by morgandawn, are all available at Morgan Dawn's vid site, which is password-protected. Again, I'm not sure of her linking policy for her password page (and all these vidders are at Vividcon right now, so I can't ask them), but you can email Morgan here (mailto:mdawn6@yahoo.com).
"Stranded" (Fraser and Vecchio) is by Gwyneth (gwyn_r and Sandy. I don't have a site for Sandy, and Gwyneth's is password-protected (plus, I don't think this vid is available there), but you can email Gwyn (mailto:gwynethr@gmail.com); she'll hook you up.
"I'll Take Today" (Fraser, Kowalski, Stella), "Homies" (ensemble), and "No Ship Like Partnership" (Mountie on the Bounty episodic) are by miruku_koohii and are available at her website, Fizz and Vinegar (http://www.fizzandvinegar.com/videos.html).
"Istanbul (Not Constantinople)" (Vecchio and Kowalski, exchanging places) is by alasen. You can find information about it here (http://www.livejournal.com/users/alasen/88798.html).
"I'll Stand by You" (Fraser and Vecchio) and "Superman" (Fraser) are by willows_mom; you can find them at her website (http://felbartlett.org/duesouth.html).
"A Thousand Miles" (general) is by peter_neverland, whose site is here (http://www.lasgalen.net/Peter/main.htm). (You may need to email for a yousendit upload.)
The Vid Weasels have a bunch of dS vids at their site (http://www.vidweasels.com/fandom_vids.html#DueSouth); most of these are older, VCR vids, so quality varies a lot.
(Also, currently MIA: "If We Kissed" (Fraser and Kowalski), by Fabella, which I haven't seen yet. I've sent an email to the vidder; I'll let you know if I hear from her.)
And you've already seen astolat's marvelous "Zebra."
That's all I've got right now; hope this helps scratch that itch somewhat. And if you find any others, I'd love to hear about them, either via email (I have a LJ address) or a comment. I adore this fandom, and it is woefully under-vidded.
